the salivary glands secrete enzymes (particularly salivary amylase or ptyalin) necessary for the initial digestion of starch in the mouth. namely, these are the parotid, submandibular and sublingual glands.

no enzymes are biological catalysts they are produced by certain enzyme secreting organs and help reactions to take place whereas , in the mouth saliva is present which is made up of the enzyme ptaylin and mucus

The teeth begin the process by chewing your food into smaller pieces. You also made some enzymes (salivary glands) that begin the breakdown of sugars and other enzymes that begin the breakdown of lipids (by the tongue). You also make mucous that helps 'slid' the food along. Not much else occurs until the bolus of food reaches the stomach.
