Use fresh ingredients, and fresh oil (traditional Chinese food is cooked with a lot if oil, because that's where a lot of the flavour comes from). Garnish it. How it tastes often relies a lot on how it looks too. Don't over- or under-cook the food. Use a good wok or whatever it is you're using to cook.
