According to Wikipedia, Deseret was the proposed name of Utah originally, which from the Book of Mormon means honeybee. This name was favored by Territorial Governor and LDS President Brigham Young as a symbol of industry.

When eventually Utah was accepted as a state, the beehive was kept on the state flag as a symbol meaning much the same as the original name was intended to.
