The handle. The handle attaches to the stem. The stem is part of the valve. Single handle or quarter turn faucets, the stem is in a cartridge. That should cover it. The handle on a faucet does not have a special name, it is just a handle.

take a hair tie, put it around the sprayer on the kitchen sink on the handle. once she turns the water on to wash her hands or do dishes, It'ss spray her and get her soaked !
If this is a shower handle, this is a common mistake installers make. Just remove the handle, and rotate the pin that the handle connects to by 180 degrees. This will reverse the mixing cartridge. If this is a sink, then your water supply lines are reversed. Just shut the water off, and switch the lines supplying water under the sink.
Call a plumber
You cannot do this without a way of stopping the water. The sink sprayer is hooked up through your kitchen faucet for a reason. When the faucet is shut off, no water can come through the sprayer. If you hook up the sprayer to a water filter, the handle on the sprayer cannot handle the pressure of the water system and will continually run when the handle packs it in, more than likely when you are not home!

Quicksand

You may have a clog in front of your sink as the check vent is lower than the drain on the sink. Snake it or call a plumber.

Underneath the sink there should be two valves - one for the hot water, and one for the cold water. If there are none, find where your water line enters the home (usually in the basement) and there should be a valve there that you can close. If you do, remember that you have shut off all the water in the house including the toilet (s). Also remember to open the kitchen sink faucet (hot and cold) to drain what water remains in the pipes before attempting to service the faucet (if that's what you're doing). Also, whenever operating these pipe valves (whether opening or closing), turn them as far as they will go, then reverse about 1/8 of a turn. This will allow a little wiggle room (you can budge in both directions) when you have to operate the valve at a much later time and it has become stiff.
