You can do a couple of things....
The best way to keep your pictures is #1. Once the pictures are on your computer, you can upload them to websites, order prints of them, print them out yourself, edit them in a photo editor like Photoshop, or save them to an album on your computer.

I am assuming you are referring to the apple itouch. No, you can't change a memory card on a itouch. If it is full I would suggest rotating your music/videos in and out or buying an ipod classic

I do. Doesn't seem to hurt it at all. I've been using this one for about three years now with NO problems. When it gets full I just download the pictures onto my computer then delete them from the memory card. If you don't want your computer plugged up with alot of picture files, transfer them from your computer to flash drives.
