It is a symbolism of good luck and Chinese are obsessed with anything that has to do with welcoming prosperity and luck during the new year
Every culture celebrates different things on different cultures. Chinese people eat sweets on the new year to celebrate the new year and some sweets are tradition and culture, other countries eat sweets too! I guess it's mostly popular as a celebration. Hope this helps :)
