First of all, don't use anything plastic. Zip-lock bags, grocery bags, etc. Using an envelope is the way to go.
Then to keep them the freshest possible, place the envelopes in a tightly sealed glass jar and place in a refrigerator (NOT a freezer). Seeds kept in this manner can be completely viable five or even ten years after being sealed. Don't freeze seeds that you wish to plant, since freezing dehydrates them too much.
