First of all you need a Brain Bucket or what other people would call a Dirtbiking helmet. It should fit your head so that it is'nt bouncing around on your head or crushing your brain. The next thing that is REALLY great to have is Dirtbiking boots. They have saved my ankles countless times and there comfortable. Knee and Elbow pads are also a great thing to have when your skidding down the track or trail. Eye protection is also a very vital part of your gear bag it will save your eyes. Then you can buy the jersey, pants, gloves you know the things that dont really provide protection. So FIRST buy the PROTECTION it will save you alot of greef. I would recomend buying your gear new you dont want to be in someone elses sweaty gear right.and chest protecters are good to

Yes, you could get dirt in them if you don't.
The army had motorcycles in the 30's and off the clock the men would race in the fields so i'd call that dirt biking.
That depends on what you are using it for. Obviously, if you are dirt biking, you should use a dirt bike, and otherwise use a street bike. Start out with what you are going to use the most - dirt (freestyle) or street racing.
You need to be big enough to be able to find a bike that fits, then just go for it.
dirt-biking is for dirt-bikes it can be either stunt or mud riding
