Tape is your friend.
Personally, i find that taping together the larger clumps of wires works. what you can also do is tape them to the desk leg. Rubber bands also work if the cables are unmanageably long, you can use rubber bands to keep them folded up.
If there are cables or cords just lying around (chargers, headphones, etc.) you can hang them up on the wall on a tack when not in use (don't put the tack through the cords mind you).
And of course, if the cords are coming from every which way, you can consolidate where they all come from with a power strip if you haven't done so already. Good luck!
