Just from getting hurt. Since she is a human, Edward sees Bella are being very breakable (at least compared to a vampire who is indestructible). And considering how clumsy Bella is, there are a lot of times when Bella could get hurt. Plus, there were also the nomadic vampires to consider (James, Laurent, and Vistoria) who were after Bella. Edward tries to protect Bella from things like that.
Why does Edward Cullen try to seduce Bella in eclispe?
Well Bella WANTS him to. That's why. But he won't until they get married (in Breaking Dawn).
