He says: "requiescat in pace" which is Latin for "rest in peace". He may say it in Italian instead of Latin, and so the wording might be slightly different.

He says "richiesta di pace" which means "demand for peace." (It sounds wierd but it's a translation thing)

Edit - even though Ezio live it Italy I do not think he speaks Italian but indeed Latin. The latin translation for Rest in Peace is

"Requescant in Pace" and the Italian translation is. "Riposi in Pace"

Ezio says it in Latin.

^ Note however that Ezio didn't say "requescant", he said "requiescat". "Requiescat" is, as mentioned above, a Latin word meaning rest.

It varies, and I'm not sure of the spelling, but it usually ends in:

Recwieska de pacce.

(Reh-kwee-eska dey patch-eh)

It isn't the correct spelling, but it means "rest in peace."
