A Bettas nest is simply a mass of bubbles at the surface of the tank. (usually in a corner) It may contain bits of plant etc if they are available.

They will be very distressed if they are attempting to build a nest or look after one with fry or ova in it. The reason Betta tanks should be covered, and 80F is the maximum temperature at which Bettas should be kept, is to avoid draughts and excess heat bursting the bubbles.
If you look at the size of a Bettas tiny mouth, and then engage your brain, you will see that frozen snails are not, and could not possibly be, a proper food for Bettas. Bettas are 'insectivors'. There are special foods available for Bettas and a weekly treat of something 'Live" like brine shrimp is good too.
