Well my dog can be nauhty and if she has done something like ripping her bed she will pit her ears back her eyes go googly and she is wagging her tail none stop and as soon as you look at her she falls to the floor. Then after half a hour she lays down and doesn't do anything and that's how I can tell if my dog has done something and feels guilty!!!
Addendum:While the emotions of animals is debated by many, those of the perspective that dogs experience emotions should deny one as complex as guilt in dogs. Guilt requires a deeper understanding of right and wrong. Dogs understand approval and disapproval and the animal described above is reacting to the disapproval of his master. The act of dropping and lying prone is submission, not guilt.
In short, dogs do not experience guilt. They may experience fear, anger (debated), happiness or satisfaction, and submission. Anything else is far too complex and requires far more intellect than any dog possesses.

The so-called "guilty look" of dogs is actually not caused by guilt. In experiments, the guilty look was evoked regardless of whether the dog was guilty or not, and instead evoked by the scolding of the owner. There is no evidence that dogs are capable of feeling guilt or shame.
