You certainly can! Longhorns are just another beef breed just like Angus, Charolais, Simmental and Herefords are. Though they will finish at a lighter weight than Angus or Charolais beefers will, they can still be slaughtered and eaten and have just as good quality beef as the other breeds used for beef production.

It is recommended to feed cattle grass, hay (not too much rich alfalfa hay as this can cause digestive problems), a COB mixture (corn, oats, barley), silage, or pure corn. These feeds are high in energy allowing the optimum growth and meat conversion.
