Baking Soda neutralizes acidity, or, in other words, it raises the Ph level of the soil the plant resides in. Most plants desire a neutral (6.5 - 7.5) Ph level. Soil below 7.0 (absolute neutral) is considered acidic. Soil above 7.0 is considered alkaline.

If you are not in a rush, pulverized limestone will do the job for far less cost.
