Chymotrypsinogen is an inactive enzyme precursor produced in the pancreas. When it comes into contact with enterokinase, found in the villi in the small intestine, it is activated and converted into chymotrypsin.

The enzyme converts some polypeptides to amino acids.

If it is not produced as an inactive enzyme precursor of protein-splitting enzymes it would digest the pancreas.
