Check the coolant reservoir to see if some or all of the coolant leaked out. Maybe you have a leak you missed.

No. You do not have to change their water everyday. But every other day is good.
Water in the oil isn't as bad as it sounds, although it certainly isn't good for the engine. Just tow the car in for an oil change. They'll probably try to sell you an engine flush and multiple oil changes; don't go for it. You only need a SINGLE oil change, then drive the vehicle until the engine warms sufficiently to drive the remaining water out of the oil. When you first run the engine, the oil will appear milky, but as the water is forced out of the oil, it will slowly return to normal appearance. THEN take the vehicle back for another oil change. If the crankcase was overfilled, (more than 5 quarts) you will need to make certain that the main seals are not damaged. Make certain that you don't run the engine again until after the oil change.
It's a good practice to change the water pump when you are changing the timing belt.
It will take about 3 oil/filter changes. Put some SeaFoam in the 2nd change. Allow the oil to drain about 10-20 mins each time. and drive it 10 mins between the changes to get the oil hot and worked in. repeat until oil is no longer milky. I would change it again after you first long ride. good luck.
