it really depends on the type of fish, but if you cooked salmon, bass, or perch, it's supposed to be sort of juicy and flaky, and can be pulled apart with a fork easily. If its like jelly, you probably didn't cook it enough.

Some fish, if you defrost it in water, absorbs the water and never will cook completely. Had this happen. No way to recover except by ordering Pizza in.
