The only time that it is recorded that Jesus said this, is in response to a question from two of his disciples as to where he was staying, and his answer is to your question too:

People who believe in Jesus who haven't seen him believe by faith and are blessed as opposed with people who actually walked with him, having had an extra reason to believe. It's easier to believe what you see than what you don't see.

Jesus will come back in the last days of the Earth, and when he comes, you won't be able to miss it (see Revelation 19:11-16) If you mean, what day did Jesus return after his death, he rose 3 days after his crucifixion which was a Sunday.
They mean that the person's mood will shift and they will see that whatever the other person has said makes sense.
