It depends on the metal but often it will change phase and crystal form and have different properties. As an example steel when molten is in what is called the austenitic phase. This is a face Centered Cubic crystal structure. When quickly quenched it becomes martensitic which is brittle and Body Centered Tetragonal. Cooling down slowly will produce a pearlite structure.

If a liquid metal is poured into a mold it will take the shape of that mold and when cooled will keep the shape of that very mold. It will also contract/shrink.

When a metal or any other solid, liquid, or gas is heated they expand. This happens because the molecules that make these substances start to move or "shake" more than they already do. If they are heated to a certain point (depending on the substance) they will shake enough to break free. if you had a solid it will melt into a liquid, and a liquid into a gas.

Metal that is heated will expand(meaning to become larger), and metal contracts(shrinks) when it is cooled. I think that it is because when it is heated, the molecules spread apart(sort of like when you heat water), and the opposite happens when it is cooled.

Metal will normally change in several physical ways when cooled:

  • All metals will shrink as they cool - the opposite of the expansion that they undergo as you heat them up
  • The electrical resistance of metals will decrease as they cool down.
  • The ductility of metals decreases with decreasing temperature. Some metals change from ductile to brittle as the temperature continues to decrease. As an example: it is believed that one of the reasons the Titanic sank is that the metal panels of the hull had become somewhat more brittle in the cold waters of the Atlantic and fractured when the ship hit the iceberg.
  • Depending on the temperature it starts at and the rate of cooling, the metal may change phase. There is the obvious case of going from molten metal to solid metal, but many metals have different structures depending on the temperature at which they were "quenched".
