The majority of the details of kashrut (the dietary laws) are described in the Talmud.

Basically, first century Jews' lives revolved around the Old Testament and God's Commandments. They had so many rules it was an actual burden. Jesus loosened things up a bit which got Him in trouble with the Jewish leaders at that time.
