If by "jew symbol", you mean the Star of David, it seems to have originated as a protective symbol or amulet in the 11th century. In Hebrew, it is called the "Magen David", which means "the shield of David".

By the 17th century, is was widely recognized, in both secular and religious contexts, as a general symbol of the Jewish people.
