The flower on the cover of New Moon is actually a ruffled tulip. Unlike the other three books in the saga, Stephanie Meyer did not have any control over the symbolic meaning of the cover. So essentially the flower has no meaning whatsoever and was put in by the marketers. On the other hand, the apple on the cover of Twilight symbolizes the forbidden love Bella and Edward have (like the apple, the forbidden fruit of Adam and Eve fame); the ripped ribbon on Eclipse symbolizes Bella's twisted life and the choices she has to make; and the Chess pieces on Breaking Dawn refer to how Bella started in the back, as a pawn/human (the redness to show her blood and humanity), and finished in front, as Queen/vampire (the paleness...well self explanatory).
