Christians used to make the sign of the cross in order to identify themselves to other Christians.

the sign of the cross represents christ. Some believers, while making the sign of the cross say to themselves: open mind (when the touch their forehead), open heart (when they touch their chest) and open arms (when they touch their shoulders). The sign of the cross symbolizes three persons in one God: The Father, the Son, and the Holy Spirit.

Catholic Answer

The Sign of the Cross represents the Cross upon which Our Blessed Lord died to win grace for each and everyone of us. When we make the Sign of the Cross, we are claiming our baptism, renewing those promises, and using those graces which we were given in baptism. We are praying to the Father to help us pray and act as a Christian, as His child, and proclaiming to the world that we are a Christian.

from Modern Catholic Dictionary by John A. Hardon, S.J. Doubleday & Co., Inc. Garden City, NY 1980

2157 The Christian begins his day, his prayers, and his activities with the Sign of the Cross: "in the name of the Father and of the Son and of the Holy Spirit. Amen." The baptized person dedicates the day to the glory of God and calls on the Savior’s grace which lets him act in the Spirit as a child of the Father. The sign of the cross strengthens us in temptations and difficulties.

Should Roman Catholics only cross themselves in chapel and their house so they don't offend us non-Catholics?

From St. Cyril of Jerusalem (+386)Be not ashamed of the cross of Christ . . . but openly seal it upon your forehead, that the devils may behold the royal sign an flee trembling far away. Make this sign at eating and drinking, at sitting, at lying down, at rising up, at speaking, at working. -opinion of a Catholic: from the earliest times, we have been urged to use the sign of the cross always and everywhere to witness to our faith in Our Blessed Lord, and His Sacred Passion upon the Cross. Roman Catholics should use the sign of the cross everywhere to witness to their faith in God. They are not trying to offend people, "people" will get offended at almost anything, Catholics should witness their faith - I, and everyone I know, always say grace before eating, whether in a cafeteria - in a hospital, or in a restaurant, or even in a fast food place, and I (and they) always cross themselves before asking a blessing on our food.

Is Robert Griffin III Catholic?

I don't know for sure, but some of his personal mannerisms seem to indicate that he is Catholic. RGIII makes the sign of the cross after every touchdown and other times on the football field. I would think it would be unique if a Baptist would make the sign of the cross. The only religious groups that I'm familiar with that makes the sign of the cross are Catholics and High Anglicans (Church of England). The orthodox Churches also make the sign of the cross, but opposite to the Catholics and Anglicans. Baylor is a Baptist College. I would think non-Baptists can attend Baylor. Non-Catholics attend Notre Dame and all Jesuit colleges and high schools. Historically, Baptists have been virulent anti-Catholics, primarily because of the Catholic Pope. I've read that the anti-catholic fever reached an all-time high with Baptists when JFK ran for President. Now with Romney running for President, the Baptists are at it again. I had a Southern Baptist friend from Oklahoma tell me once that when he was a child, the Catholics were considered idol and devil worshipers and the Pope was the anti-Christ. Amazing!!
