Any hand containing three cards of the same rank, example, you are playing Texas Holdem and have AA in your hand and another A falls on the flop. This is commonly known as a "flopping a set".
Alternatively, you are holding AK and AAx comes on the flop. This is known as "flopping trips".

The hand of three of a kind and a pair is called a Full House. The three cards have to be of a same number or face value and so should be with the pair. In an event of a tie between players, the highest three matching cards are taken into consideration.

There are no tricks in poker, there is three of a kind or a pair. A three of a kind always beats a pair.
