High temperatures can cause proteins to denature. Protein denaturation is when the proteins lose their shapes (more specifically, their secondary and tertiary structures). Because shape follows function and proteins gain function at their tertiary structure, this also means that the proteins lose their function.

A protein's function depends on its shape. High temperatures stress the bonds that make the protein take the shape that it has potentially breaking them and causing them to new configurations thereby changing the shape of the molecule. If the protein assumes a different shape it can no longer function the way it originally did and is said to be denatured.
