Enzymes are proteins. Protein function is related to the 3-D structure of the protein, which may be affected by pH. Proteins are also buffers that maintain pH within a certain range, but when the limits of this range are exceeded, the protein is denatured and cannot function.

Like anything else, enzymes operate best under optimal environmental conditions. Two major influencing factors are temperature and pH. At excessively high temperatures the enzyme may be less efficient and outside the optimal pH range enzyme activity will slow.
