The East Indian people brought with them an assortment of food, such as roti which they called "chapati" or "phulka" seasonings such as cumin cardamom and others ,they also brought sweets such as peera, kurma, goolab jamoon and curry and spices, it's the technique that made it genuine, which they had to adapt to, using certain ingredients available to them, they would have to use brown rice instead of basmati, hope this is helpful.
