that is kind of a mushy dinner, so i'd be sure to make the appetizer crunchy. perhaps a vegetable platter, but with more exotic veggies like endive and jicama, some snow peas and asparagus tips. (blanching the snow peas and asparagus makes them easier to eat and a fancier presentation) offer a few different dip choices as well, such as hummus or tziki (sp?) sauce. finally, look in your healthfood section for some exotic chips. such as sweet potato, beet etc. they are original, beautiful, and surprisingly delicious!
I always make mashed potatoes with stuffed peppers. Pasta might work, too.

It depends if you boil them or not first. If you are going to boil your peppers first before filling and baking, they only need to be baked for 30-35 minutes at 350 degrees covered with foil or or lid. If you are not going to boiling them, you should cook them for at least 45 minutes at 350 degrees covered with foil or lid.

Bell Peppers are a good source of Vitamin A and C, which are both very good for your health and nutrition.
Milk is good with Mexican food because it takes away some of the sting of the chili peppers.
Food in general is good for you, the nutrients you get from eating help you survive. But as far as any health related bonuses no, there is no real health bonus to eating them.
