A good question! There isn't much that isn't eaten in China. In fact, the people of the southern Chinese province of Guangdong have the reputation of eating absolutely anything. Even among Chinese people they are considered to be slightly too liberal in their consumption!

As far as animals are concerned, pretty much anything is fair game - turtle, snake, dog and grubs would all be happily devoured. As far as I know, the more 'exotic' animals such as panda, tiger and other big cats would not be eaten.

No part of the animal is considered inedible, thus duck neck, chicken feet, pig face are all fair game.

One thing that is not eaten much here is salad, it seems a little odd to the Chinese to eat raw food in this way. Insects are not as popular here as they might be in some South East Asian countries (with the exception of Guangdong of course) and I believe that cat and bat are also off the menu.
