These ingredients can also hide under other catch-all names like "Natural Flavorings". When in doubt, contact the manufacturer.

*oats are grown in rotation with wheat in most U.S. fields so cross-contamination is an issue. Some suppliers now grow oats in isolated fields and process them in dedicated mills to ensure that they are not cross-contaminated, however some celiacs continue to react to even these specially grown oats: if you have celiac disease, talk to your doctor before consuming oats. On a more general level, "some foods to avoid" can be just about anything that has an ingredient list, since wheat, in particular, is in most processed foods. Unless specifically labeled gluten-free, a celiac would avoid bread (including Pizza, and even corn bread, and other quick breads like muffins or pancakes), donuts, cookies, pasta, chicken-fried anything, most commercial cereals, many commercial soups. Celiacs should also question french fries sold in restaurants: if fried in the same frier as the chicken nuggets and the breaded onion rings, cross contamination is a major issue. On the other hand, other than wheat, rye, barley or oats (and their cousins spelt, kamut, and triticale) whole foods are safe: fruits and vegetables, nuts and unprocessed meats, dairy products and grains other than those four.

You must avoid anything with the protein gluten in it. This generally means anything with wheat, rye and barley or any of their byproducts in it. There are many ingredients, especially in commercially prepared foods like canned gravies and soups that have some form of wheat as a thickener. For more details go to www.celiac.com.
