That person has chemical energy in the form of the biochemical processes in the body that operate the muscles that apply the force to create the movement necessary to wind the clock. So, chemical energy (from ATP if you ask a biologist) drive the mechanical process of moving muscles to apply the forces winding the clock. In the muscles, the conversion of chemical energy to mechanical work is not 100% efficient, so some chemical energy will also result in heat generated with muscle movement. (You do sweat when you exercise.)

In accordance with our theorem, if one carefully measured the heat produced and the work done by the "system," the person winding the clock, the change in energy of the system equals the work done in winding plus the heat generated in the body movements.

We can go further and explain the source of the energy that flows into the body, but that is pretty obviously the food you eat which is another form of chemical energy which was previously derived from plants taking in energy from the sun!
