Stress and weight changes will affect your periods, but so will everything. Periods are controlled by the hormones in your body, if you are going through hormonal changes, eg puberty or menopause (puberty itself for a woman can last up to 12 years) this will effect your cycle. It is not uncommon to miss several periods in a row, if you are worried, simply see a doctor. Good luck

How does exercise help prevent harmful stress?

The stress response is basically the body's way of preparing to defend against some kind of external danger. The chemistry of the body changes to prepare it for action, like increased heart rate, increased respiration. If a person experiences stress, as in harmful stress, it doesn't know what to do with the excess energy. So exercise helps to burn it off so it doesn't have negative effects on the body.
