It all depends on exactly where the capacitor is located in the amplifier circuit and what it's function is.
As part of the input, open circuit would prevent all signal getting through and therefore no audio at all.
As part of the power supply decoupling, it may allow ripple or hum to get through, or cause distortion at loud passages.
As part of the amplifier biasing, it will cause a drop in amplification and make it very quiet.
