Red blood cells, a major component of blood, carry and distribute oxygen throughout the body, giving individual cells access to oxygen. Oxygen is necessary for cell respiration - a process that allows cells to generate the energy they need to sustain themselves and do their tasks and jobs. If enough blood is taken from the body, cells can't access oxygen to sustain themselves, let alone do their job, so they would shut down and begin to die. This is why major blood loss can result in death.
