I've found this recipe for batter serves up delicious pancakes:
1 cup flour
2 tsps sugar
1/8 tsp salt
2 tsps baking powder
add 2 tbsps vegetable oil
1 cup milk
whisk together until smooth, then add to medium- hot oiled pan. Flip when golden and enjoy.
You don't need eggs.
