They are machine sliced, then treated with a mild solution of ascorbic acid to retain their color. Ascorbic acid is a fancy name for vitamin C. After the treatment, the bags are sealed against spoilage.

When you put sliced apples out on the counter, they turn brownish, because lots of oxygen gets to them. When you put them into bags, it lets less oxygen in.
