This is the same premise in which plugging your nose while eating something distasteful lowers the severity of it.
You don;t taste it as well because a lot of what we think is the sense of taste is actually smell.

Your body moves repeatedly while you are sleeping so there is no safe way to keep your mouth shut while you are asleep. Your mouth will automatically open if you are not getting enough air through your nose.
