The process of coating a metal with another metal is called Electroplating. Your chain would be suspended in a liquid that had a high concentration of desired gold content, one end would be attached to the positive side of the battery while the other would be attached to the ground. This produces an electron flow through the chain causing the gold to adhere to metal. Most likely the term dipping came from this process since the gold plating is kept in solution.
