There is not one person who has a hermit crab with a missing leg. I found a hermit crab with a missing leg and even though the store keeper told me that he had a missing leg I still felt I had a bond with him. If you do get a hermit crab with a missing leg you just have to wait until it molts. Once it molts the leg will grow back and it will be like it never had a missing leg in the first place.
This depends on the kind of crab, but I can answer that for Alaskan King Crab Legs there is approximately 1/4 lb (4oz) of meat in one large leg. Snow crab would obviously have much less.

It is ok for your hermit crab to lose only one leg in a certain amount of time but if your crab is losing more than one leg a nite put them in an isolated tank because there is a chance your crab may be dying.

Yes, a hermit crab will grow its let back if it has lost one when it molts. It's easier to see if your hermit crab has signs of molting. If its lost a leg you will see that the leg will start to turn into a gelatin like substance. Which tells you its going inot the stage of molting.

Wrap the crab leg in a kitchen towel and hit it in order to crack it. Use a smooth-faced meat hammer (or about any other hammer) to crack it open. Even a rolling pin will work. Then you can easily open them with the tip of a kitchen knife. Wrap your left hand in a kitchen towel and use the knife with the right hand. This is to prevent slippery knife that may hurt you. Always grab the crab on one side and point your knife to the opposite. That way if it slips, it will not cut you. I wear a glove or use a towel to hold the crab leg in one hand and use a pair of kitchen shears to cut the leg from one end to the other. The meat will fall out. If they are the smaller ones that are finger sized in diameter, I use a short tined fork and work one tine under the shell and pry up. This splits the leg a little. Push the fork into the split and continue till you get to the other end. This works like the old fashioned can openers.

Personally, I grab my ankle of the leg that stays on the ground and you follow through like it is a cartwheel, you can still put your hands on the ground, but the key to this dance move is that you are only lifting one leg off the ground and it looks like a cartwheel.
