Baking Soda is Sodium bicarbonate and vinegar is acetic acid.

When they are mixed together, they react to form sodium acetate and carbon dioxide. This carbon dioxide comes out as a foam.

Baking soda, also known as sodium bicarbonate begins to change it's form into soda ash, also known as sodium carbonate once you expose it to heat.

The chemical reaction begins at around 100 degrees celsius and should reach it's peak at around 200-300 degrees celsius.

The pH of baking soda is significantly lower than the pH of soda ash. We're talking about a leap of roughly 8.4 pH -> 11.6 pH

This is what happens when you mix baking soda and heat: 2NaHCO3 → Na2CO3 + H2O + CO2

When Baking soda & Vinegar mix the gas carbon dioxide will be produced at a very fast rate, causing a foamy liquid to expand in size. This is often used to make a volcano for science fair projects, because the rapid reaction is not dangerous and can be colored with food coloring and placed in a small container. Then when the second part is mixed in the gas bubbles cause rapid expansion and overflow to simulate an eruption.

Vinegar is an organic carboxcylic acid, which is considered a "weak acid" and is rather dilute (e.g. 5%). The chemical name for it is acetic acid, and it's chemical formula is H3CCOOH.

Baking Soda (not baking powder) is an ionic salt with the chemical name: sodium bicarbonate, and the formula NaHCO3. It can be described as an amphoteric compound. When it is prepared as an aqueous solution (dissolved in water) it becomes a slightly basic or alkaline solution by bonding with hydrogen ions. Two Hydrogen ions can be bonded per molecule of carbonate, and it started with one present so a total of one hydrogen ion (H+) is taken from the solution to replace the sodium ion which has more of a tendency to dissociate from the carbonate anion than the Hydrogen ions do. only a certain percentage of molecules pick up the additional Hydrogen ion at an equilibrium state. Since the Hydrogen ions are taken from water, the water now is left as a hydroxide ion ( H2O --> H+ + OH-). Just like with other soluble hydroxides, this is the origin of the alkalinity. The carbonate ions that receive a second Hydrogen ion become H2CO3, or carbonic acid, which is a very weak acid.

The Overall Chemical Reaction looks like the following:

NaHCO3(aq) + H3CCOOH(aq) --> H3CCOONa(aq) + H2O(l) + CO2(g)

The three products are: a soluble chemical named sodium acetate (H3CCOONa), More Water (H2O), and the Carbon dioxide (CO2) gas that produces the bulk of the effect described above!
