It would probably steam. Since most of the engine's mechanisms are internal, it probably wouldn't cool it down all that much.

If the engine slows and the water pump isn't real efficient you might get cooling in the heater. When you turn off the engine you aren't getting warm water pumped into the heater.
Yes the reason for that is because the engine is over heated and when its cold the engine is nice and cold perfect for starting conditions.
