The colour shouldn't change. This isn't because the olive oil is neither acidic or alkaline, but because the litmus paper only works with aqueous solutions. Indicator papers measure the balance of positive hydrogen (H+) ions (predominant in acids), and the negative hydroxide (OH-) ions (predominant in alkalies) that float around in ionic aqueous solutions. As oil is not an ionic solution, there is nothing for the paper to read. It would just make the paper go translucent, as any paper other does when soaked in oil.

Light olive oil IS olive oil. Different varieties and types of olive oil are used for different things, so one cannot say that a certain olive oil is better than another.
