Skim milk, as well as low fat milks, have a slightly higher protein level to full cream milk. the margin is around .1 grams difference.

I assume its a result of the fact that when removing the 'lower in protein cream' you are consuming a slightly greater amount of the 'higher in protein' milk itself and therefore slightly more protein.
