Because it's an extremely private feeling and putting it in writing is dangerous. She could have siblings or even her parents that may see what she has written. It is also well noted that friends of either hers or yours could get a hold of some of these text messages and really embarrass the two of you. It's best to keep your feelings towards each in person in private rather than texting love letters back and forth.

Also, if you have feelings for a girl it will definitely show in your text message. It's better to get to know a girl in person though.
