The large intestine is necessary for the body to recover water from the digestive process; without one, you would die of dehydration (although in theory, you could have a constant intravenous water supply instead).
The large intestine is responsible for removing most of the water from the digested food that made it's way through the small intestine. Without the large intestine, there would be no way for the body to absorb that excess water and you would always have runny poo. You would also be required to wear a colostomy or ileostomy bag to collect all of that runny poo.
