i dont see how pancakes can crumble, but if your talking about them getting burnt then i sggest you use a spray on oil in a can. i regularly do not use this type of il because its not very healthy, so do not use that much on the pan. your problem might be the typr of pan youy use as well, try for a thin black metal or any other type of thin pan.

∙ 14y agoOne reason pancakes can turn out flat and not fluffy is if there is a problem with the leavening agent, typically baking powder. Assuming the amount in the recipe was properly measured, the baking powder may be inactive. Test the baking powder by taking a spoonful of it and dropping vinegar on it; carbon dioxide gas should bubble out of the mixture upon contact. If the bubbling is slow or non-existent, the baking powder is inactive.

∙ 11y agoFrom my experimentation with making pancakes, milk is a vital ingredient in making them fluffy, and so is extra flour. (Use sugar to balance the flavor of the flour). If you want them to be like crepes use water instead, and only egg white.
