The strongest civilizing force in Europe during the early Middle Ages was the Church.
Rice was introduced to Europe in the 10th century by Moors in Spain. It was also brought to Italy by Arabs and was grown as far north as southern France by the end of the Middle Ages. It was expensive, but was available, in much of Europe of the later Middle Ages, and was eaten by wealthy people. There are links for sources below.

There was no one invention that brought Europe out of the Dark Ages. A few important inventions that contributed to a rise in European civilization were the horse collar, horse shoes, the heavy plow, the wheel barrow, and three field crop rotation, all of which increased agricultural production so farmers could support a greater population, helping increase the numbers and sizes of towns and cities. Well, it originated in the East, and was brought over to Europe during the Crusades in the Middle Ages. From there, it expanded and became very relied on.
There wasn't much trade outside of Europe in the Middle Ages. Shipping hadn't developed and it wasn't until 1492 with the sailing of Columbus that the New World and old met. The only trade route was the Silk Road and that was late Middle Ages. The Crusaders brought back things, ideas, and skills that changed Europe. Eventually Italy will become the leading traders of Europe.
