BHT that is used as a preservative is butylated hydroxytoluene. It is naturally produced in the pericarp of lychees and by fungi naturally occurring in olives during pre-processing storage. Contrary to misinformation on it, BHT is generally recognized as safe, and thus allowed by the FDA in minor amounts added to foods. The National Cancer Institute has also determined BHT to be noncarcinogenic.
