I think it is the order of the dragon since that's on his medallion.
The emblem for the order of the dragon is actually a dragon wrapped around in a circle with it's tail wrapped around it's own neck. I think that might be the closest thing you'll ever find to a crest. But this is Vlad the impaler I'm talking about and not Vlad the Vampire. If you were referring to the fictitious creature Brom Stoker made. I would look at Dracula's ring. It was an artifact created for the film adaptation long ago and has an obviously fake family crest on it. I say fake for two reasons...
First there is the big "D" in the middle of it with four crowns surrounding it instead of just being sectioned into 4 quarters describing different aspects of his family history.
Second there is a bat at the top of the shield in the coat of arms.

Google "Mondini Family crest" to view several websites that have images of the crest.
There is no universal meaning to any of the symbolism used in a family crest. The meaning depends on where in the world the crest was designed, when, and by whom.

Most families never had a family crest. For those few who did, when a woman married, she joined the family of her husband and that crest would apply.

Count Dracula always tells about his "ancestors" in sentences like "Who fought against the Turks? A Dracula!" After Harker found out that Dracula is a vampire, he also says: "The Count must be the same person as the Draculas he told me about!"
